my son is home from college and seems somewhat offended if there is not food made. so I have been cooking more than usual. tonight, I made alfredo chicken breasts with mushrooms and spinach. Tomorrow is Father's Day and I am making a yellow cake with chocolate icing.

Something I saw on the Food Network once. Hot spinach and tomato salad with grilled chicken breast. It is super easy and super tasty. Just cut up some tomatoes into wedges. Put the in a baking dish with some sliced onion and sliced garlic. Drizzle some olive oil on top and toss it a bit, and then bake it until it all gets soft and cooks down a bit. Once it is out of the oven, put it on top of raw spinach. The heat will cook the spinach.  I like to add grilled chicken breast and some parmesan cheese, but it works as a great salad or side with lots of meals. ETA: firm tomatoes are best.

Tonight we are having lemon chicken with capers, salad and a fresh loaf of ancient grains bread.
(we are pretending we are sitting in a Mediterranean cafe LOL) LOL Elf, I made lemon chicken with capers too  I made a bluecheese & pear salad to go with it, homemade caesar dressing...just to make sure everyone's arties were clogged. lol jk

Breakfast for dinner sounds good. I don't have bacon right now, but after living in central PA for 12 years, I finally tried scapple. It actually wasn't bad. Oh how I miss scrapple!! I love it fried thin and crispy. We can get livermush here (someone told me it was just like scrapple) but it tastes as appealing as it sounds. Yay someone else likes scrapple!!! i love it thin and crispy too.

Fried crisp with some maple syrup drizzled all over it. ---- sigh ----
