they are chocolate cake, old fashioned, cinnamon sugar and blueberry cake (which you can't see.) I didn't get the apple cider ones this week. You see it's a box of a dozen, and each of my three kids have eaten one. I HAVE NOT!

Oh no! Bad gluten free yummy donuts! Bad bad bad smile. They look very good, thank god they are not in my house...I'd be a goner! Well done on your restraint!!!!!! I fell quite a bit off the wagon this week,more to the wise, do not start this during the same week as Aunt Flo smile. I am starting tomorrow officially but eating very well today, only carb I have had was one slice of brown rice bread. I am so impressed with all of you, thanks for inspiring me :))))

Okay, back on track! I had some grilled chicken and a salad made of red peppers, orange peppers, tomatoes, and green beans tossed with olive oil and some apple cider vinegar! It was very yummy and I feel pretty good.

Those donuts look fabu, but honestly and truly, I don't feel the slightest interest in having one. Yay! grin

Went to my SIL & BIL's for dinner tonight. Fortunately, they are also on the wheat-free bandwagon, so..... BBQ'd steak, green salad, greek-style salad, quinoa salad, green beans & garlice sauted.

For dessert, I took e.taylor's cream cheese squares and served them with sliced fresh strawberries macerated with sugar and vanilla paste, some fresh blueberries, and whip cream. Yummo dinner!

Bought a bag of Meyer's lemons and have continued starting the day with an 8+ ounce glass of water with juice of half a lemon (a whole Meyer's one) in it. Then, either a fruit smoothie for breakfast or yogurt and fruit.

Haven't had any issues with eating wheat-stuff. Wooot! Nor any cravings for it. Double-woot!

Has anyone tried the "cereal" called "Holy Crap!"? I get the plain version called Skinny B, which is chia seeds, hemp hearts and buckwheat, all raw. Mix it into yogurt, let it sit a few minutes, top with fruit and Mmmmm! grin

for you, my dear cricket....anything.

The cheesecake:
crust:
2 cups of walnuts blended into a coarse flour
heat about 3 T. of butter with a dash of cinnamon, vanilla (maybe a tsp) and some sweetener to taste...the amount will vary based on sweetener (I use stevia and it's about 5 drops)

mix with walnuts and press into pan. I use a 9x13 I think. I've also done an 9x9 and it's a bit taller. Bake for 10 minutes at 325.

Filling:
16 ounces cream cheese
4 eggs
2 T lemon juice
1 tsp of liquid stevia (OR a half cup of liquid sweetener OR 1 cup of sugar)
2 tsp vanilla

pour over crust and bake for 28 minutes.

Topping:
16 ounces of sour cream
1/4 tsp or so of stevia (2 T of liquid sweetener like honey)
1 tsp of vanilla

spread over cooked cheesecake and return to oven for 10 minutes.

you can play with it a bit to increase or decrease sweetness, but it's really good. It's best if you chill it for 12 hours before eating.

Hi! So today I did not have any carbs except vegetables and only had one slice of brown rice bread yesterday.....for how I have been eating as of late that is a big shift in the right direction BUT I am starting to feel sick....achey, sore throat, etc and I know it may just be I am getting a cold but I feel like whenever I get back on track after a long period of time being "off" I feel sick at first. Has anyone else felt this way??

THANK-you, e.taylor! laugh The recipe is similar to my "regular" recipe, 'cept there's also a lemon glaze layer that goes on top of the cream cheese layer that reeeally makes it lemony and yummy! drool

Lemon Glaze:
½ cup sugar
1 ½ tbsp. corn starch
¼ tsp. salt
¾ cup water
1/3 cup lemon juice
2 tsp. lemon rind, grated
1 egg yolk, beaten
1 tbsp. butter

The sugar could be subbed out. I use xylitol instead of sugar, 'cause it has a similar texture although to my taste buds, it has a slightly different degree of sweetness to regular sugar.

Have you made this cheesecake in a springform pan ever? If so, what size did you use? I'm thinking a festive Christmas dinner dessert, here... grin
