Those donuts look fabu, but honestly and truly, I don't feel the slightest interest in having one. Yay!  Went to my SIL & BIL's for dinner tonight. Fortunately, they are also on the wheat-free bandwagon, so..... BBQ'd steak, green salad, greek-style salad, quinoa salad, green beans & garlice sauted. For dessert, I took e.taylor's cream cheese squares and served them with sliced fresh strawberries macerated with sugar and vanilla paste, some fresh blueberries, and whip cream. Yummo dinner! Bought a bag of Meyer's lemons and have continued starting the day with an 8+ ounce glass of water with juice of half a lemon (a whole Meyer's one) in it. Then, either a fruit smoothie for breakfast or yogurt and fruit. Haven't had any issues with eating wheat-stuff. Wooot! Nor any cravings for it. Double-woot! Has anyone tried the "cereal" called "Holy Crap!"? I get the plain version called Skinny B, which is chia seeds, hemp hearts and buckwheat, all raw. Mix it into yogurt, let it sit a few minutes, top with fruit and Mmmmm!

THANK-you, e.taylor!  The recipe is similar to my "regular" recipe, 'cept there's also a lemon glaze layer that goes on top of the cream cheese layer that reeeally makes it lemony and yummy!  Lemon Glaze: ½ cup sugar 1 ½ tbsp. corn starch ¼ tsp. salt ¾ cup water 1/3 cup lemon juice 2 tsp. lemon rind, grated 1 egg yolk, beaten 1 tbsp. butter The sugar could be subbed out. I use xylitol instead of sugar, 'cause it has a similar texture although to my taste buds, it has a slightly different degree of sweetness to regular sugar. Have you made this cheesecake in a springform pan ever? If so, what size did you use? I'm thinking a festive Christmas dinner dessert, here...
